I recently found another cooking channel that I like a whole lot, "Italian Tapas" w/ Matteo Fagin. - His modern concept of Italian tapas is so creative. It emphasizes simple & healthy Italian appetizers as 'tapas'.

More and more people are venturing into cooking foods which are not the foods they grew up on, and moreover foods from the other side of the world. With our ever globalizing community (kudos to the internet, immigration & vacations to distant lands!:), I think it's inevitable that fusions and new sub food categories emerge!

I agree with u Mark and Airave that Dede is absolutely among the best of the best.

Chef John's foodwishes
and Maria's ilovetocookalot
are two of my faves (with Dede).
Neither are pure Med, but
"play the food field" as do I.
