Armenian Style Rice Pilaf

INGREDIENTS:
• 1 cup Uncle Ben's original converted rice
• 1/2 cup Thin Egg Noodles
• 1 tablespoon olive oil
• 1/2 stick real butter
• 1 1/2 cups chicken broth
• 1/2 cup water
• 1 teaspoon salt
• 1/2 teaspoon pepper

PREPARATION:
Heat up deep cooking pan on medium heat. Add olive oil then the vermicelli and 1/2 the half stick of butter. Heat until the vermicelli is golden to dark brown. Be careful, constantly stir as it can burn easily! After fully browned then add rice, chicken broth, water and other 1/2 of butter. mix well. Bring to a boil and as soon as it is boiling then lower heat to very low and simmer for 13-16 minutes until rice is cooked. DO NOT OPEN LID DURING THIS TIME! Turn heat off and let sit for 5 minutes. Stir the pilaf and serve.

The only difference in what I learned was using orzo instead of the noodles. On a bad day, this is comfort food! Sunday dinner growing up - a roast chicken (or lamb) and pilaf.

Always felt it would upset my Madig who taught me how to cook, but I'm open to trying it!
