PLEASE help me figure this out- Sweet noodles dessert (k´naffe??)

Hi, Dede!
Maybe you can help me figure out the name & recipe for a dish my grandma used to make. It is "angel hair" style noodles, covered in a sweet simple syrup and topped with toasted pine nuts or walnuts. She used to call it k´naffe, but it wasn´t toasted or filled with cheese. I know the noodles are made from scratch and then cooked on a double boiler (steamed) before they are smothered in the syrup & topped with nuts. I love this, but don´t know the real name or the proper preparation. My grandma was from Bet-Jallah, Palestine, and the most wonderful cook I ever met! (of course)

Hope this helps you out! Dede asked me to help:

Kunafe - Kenafe - Knafe Gimzawia

Ingredients

15 ozs ricotta cheese (OPTIONAL)
1/2 (16 ounce) package shredded phyllo dough
8 tablespoons sweet butter
1 1/2 tablespoons sugar
1/2-1 cup finely diced pistachios

SYRUP
2 cups sugar
2 cups water

Directions
Combine water, sugar, and kenafe coloring and boil till it becomes syup consistency, let cool.
Finley shred phyllo dough.
Melt butter in microwave and mix together with shredded phyllo dough.
Place in a 9x13 baking sheet and bake at 450° for about 5-10 minutes until dough gets a little crispy. Make sure to stir dough every 2 minutes so that it does not burn on edges.
Remove a little more than half of the dough from the baking sheet.
Spread remaining dough evenly and flatly on baking sheet.
Mix sugar and ricotta cheese together (Cheese optional), then place evenly on top layer of phyllo dough.
Evenly spread remaining phyllo dough over layer of cheese.
Bake on 425 for 30-40 minutes.
Remove from oven and pour cooled syrup while kenafe is still hot.
Decorate with chopped pistachios.

Thank you ,Mark, but that´s the recipe for traditional k´naffe. The one I mention in my post is made with Soft noodles, it´s not filled with cheese, either. Just soft nodles and simple syrup, topped with toasted pine nuts. What I need is the recipe for the noodles, and the procedure for steaming them.

Hi Stephanie. I think I'm looking for the exact recipe you are too. It's a noodly, but I think it's made just from cheese somehow..and served with syrup on it. It remains white and not filled with anything...I love this recipe. Wish I could find it too. It's almost like strips of cheese or very fine strips of dough!??? not sure..

I think you may be thinking of halawet el jibn, that is a wonderful string cheese dessert, it can be served alone in string pieces or rolled with a custard ashta filling. Check out the recipe on my site and let me know.

Nope, that´s not it either! What I´m talking about looks exactly like spaghetti, only much thinner & flatter. It´s served like spaghetti, but instead of a sauce, its covered in a simple syrup (water, sugar, cinnamon & nutmeg) and you sprinkle toasted pine nuts on top. There´s NO cheese, NO filling..............just handmade noodles, steamed over a double boiler tossed with a sweet syrup & nuts on top............. Any ideas?
